Healthy Pumpkin Chocolate Chip Cookies
This is for all my pumpkin spice lovers! These warm, soft cookies are filled with fall spices and pumpkin flavor making for one yummy, guilt-free treat!
*What you need:
-2 tbs honey
-1/2 tsp vanilla ext
-1 egg
-1/2 cup canned pumpkin
-2 tbs brown sugar
-1 tsp baking soda
-1/2 tsp pumpkin pie spice
-1/2 tsp cinnamon
-pinch of salt
-1 cup oat flour (I just grounded oats)
-1/2 cup dark chocolate chips
-dark chocolate chunks to top cookies
*What to do:
-Preheat oven to 350 degrees.
-Mix together dry ingredients in one bowl and then wet ingredients in another.
-Combine together and mix in chocolate chips.
-Cover the bowl and put batter in fridge for 20 mins.
-Form cookies and place them on a cookie sheet with parchment paper.
- Press chocolate chunks on top.
-Cook in oven for 6-8 mins & enjoy!
